I find it a bit odd...
Most people, (including me) seem to like the Griso, Norge, V11 etc.. in Red.
Not that the others aren't lovely because they are, but the red ones never seem to lay around long. If I were Guzzi, I would make more red ones just to shift more units.
If the public wanted baby shit mustard colour, that would be the colour I'd supply..
If you owned a nice Silver Norge, some bugger will come up to you in the street and say..
"Jeez mate, that's a nice bike.."
If it's red they'll say,
"Jeez mate, that's a nice Red bike.."
Yesterday a bloke in Daylesford was looking at my Norge for a few minutes prior to my return. When I got there he said,
"I really love your bike mate, it's Italian isn't it ?
"Yes mate, Guzzies are built in Mandello del Lario"
"Oh right, I thought it was a Ducati...!"

Maybe he thinks all Fire Engines are Ducati's...

That Griso on the back cover looked very nice in its dark paint. I think the green Griso is one of the nicest paint scheme.

Color is very subjective, as we all have different shades that we prefer. I have owned many bikes, in many different paint schemes. One of my favorite paint jobs, was the yellow, on my 97 Sport 1100. Not only did it look good in yellow, I felt it created a high visibility benefit for safety.

For a long time, Ducati's were primarily painted red, especially the 900SS series. Back in 92, they sent a few black ones over. These are very desirable, and usually are priced accordingly.

Red is mostly a Guzzi thing, not an Italian bike thing, at least that was the case historically.  Guzzis were all red before MV existed.  Ducati made some red bikes but mostly other colors (blue was a favorite) until they decided to climb on Ferraris band wagon in the 90s.  Yellow went along with that.  Laverdas raced in orange.

The marketing world has become a rolling cliche.
