call me uncomplicated .Simple meals food thread.

 Had a physical day, lots of heavy stuff got loaded into the truck, some demolition got done. After days like this a hearty simple meal is always in order.  My go to is fried rice mixed with refried beans topped with salsa. It just works
for me . What is your simple favorite?

I do rice and black beans often  sometimes a bowl or a burrito  usually saute red, green, yellow peepers and onion
simple tasty

sometimes i  add Braggs Liquid Aminos and its Asian food haha

   Mary Kitchen's Corned Beef Hash, Rosarita's Refrieds, sharp cheddar, Franks Hot Sauce or salsa and tortilla chips. More comfort food than anything else :evil:

Man I miss those Kiwi pies, I pigged out on those last time I was there, available at every sevice station and dairy, its hard to find anything to eat in the Nth American equivalent you have to go to a restaurant for that.
Steak and kidney, potato top, steak and cheese and dozens of others hot and ready to eat.

Ham hock slow cooked with onions, carrots, garlic and white wine.  Add pre soaked beans for the last 1/2 of the cook. Serve with boiled potatoes

Rice and beans are too carby for me. For a quick meal I do a hamburger patty and green beans or Brussels sprouts

I love to cook and do 99.9% of it in my house.
That said, fresh ground peanuts and homemade strawberry jam hits it just right from time to time!

Crockpot roast. Roast, potatoes, mushrooms, onions or anything else one cares to add. Put together in the morning when you have the energy, plug in and enjoy when you come home.

 My wife worked a a short order cook for many years...She does most of the food prep here and all from scratch and nothing too fancy...Mexican garbage plate....Browned meat of your choice, chopped romaine, hot and sweet peppers, green onions, black olives,some shredded cheese and a bit of rice or refried beans covered with blended "Ro-tel" For us this dish is more veggie than meat...Or a roast pork sandwich with sliced fried hot peppers. Fried sausage, peppers and onions  on a plate with a romaine salad.

Put a big glob of bacon fat in a iron skillet, add 3 or 4 slices of tofu with a jalapeno pepper, add saffron.  Remember the bar you were in last night with the jar of pickled eggs that the bar keep with his filthy hands reached in and got you two? Now is the time to eat them with the tofu all on a bed of turnip greens.

After many years as a fully apprenticed Executive chef & culinary instructor, it's hard to narrow it down.  Everything is cooked from scratch so Usually it's more about time and what ingredients are readily on hand.  Tired of uppity food and gimmicks.   Too many "experts" ruin food by making it fancy because making it good and plain that anybody understands is much harder imho.  For me, Cooking a great plate is as satisfying as eating it.

long prep/all day slow cook favorite is probably red beans and rice with a fresh loaf of bread, always on Monday or cinnamon sugar pork ribs with peaches or apples (whatever is in season.) Shorter schedule- Any roasted item with salt, pepper carrots celery & onions or chicken & dumplings.  Fast meal- there's so many easy saute items, pasta or polenta and sausage.  I keep fresh dough and all ingredients in the fridge and a loaf of bread or pizza is always just a whim away from ready. A fresh loaf of bread, a tin of anchovies in olive oil, some fresh oregano and maybe some cheese or a homemade sausage/brat makes a great lunch,

Now I wanna cook all day.

Rice noodles and peanut sauce.

Egg noodles sauteed in butter and garlic.

Fish filet  broiled with olive oil and lemon.

Baked spud, yam, acorn or butternut squash.

Bacon, avocado, cheese on Mexican roll.

Avocado on toast.
