Before I do something wrong, can someone explain the correct way to remove the gas cap? Thanks.

Turn it to the left to unscrew.
Edit: Early ones had a cap like a T I think, they had a button to push, a latch to swing open for a key.

I want to remove the whole cap so I can send the tank for painting.

Open the cap and lift up on the "retainer" that secures the cap to the tank, then slide it back and off of the pins. The retainer is the metal bit sticking straight up on the right end of the cap in the photo of the underside of the cap here:
