Title: Why are Deli Subs better than homemade ones?
Post by: Tom on July 21, 2021, 04:52:47 PM
Making a sammich is easy.  Making a hoagie is different.  Some tips on making one.  Rolls, seasoning, lubrication and wrapping.  Important tips.

The best hoagie/sub I’ve had, comes from the Harris Teeter supermarket in Selbyville Delaware. Order the Italian.

Good information. However, although I've never had a made to order Harris Teeter sub I can't imagine them topping Publix. Hands down the best grocery store sub ever...IMHO. I never miss the opportunity when in the South to hit a Publix for lunch or dinner. Yum!

As me papa used to say "If you want the best, you order Italian"
Food, Cars, Bikes, Art, Cloths, Guns, Women.... makes no difference

Next time I’m south of the mason dixon, or wherever I can find a Publix, I’ll try it. Thanks.

Why are deli subs better? I think it's two things: 1) fresh ingredients (esp the roll) and 2) somebody else makes it for you!

Agreed! The roll is the big difference as long as good meats and provolone are used. 2 places up here in northern Jersey worth trying for subs: Garys Wine Market in Wayne, on 23 makes a killer good Italian! Order it on a baguette and you will be in figurative Heaven! And yesterday I was at my other favorite, Matera's in Rutherford on Park Ave. Their "Belleville"...really an Italian combo.....puts most other subs to shame. The roll they use is outstanding. Also, Randazo's on 202 down in the Raritan area is superb. Ever been there Eric?

This is very serious business here in St. Louis, where there is a very traditional Italian neighborhood known as 'The Hill'.    I like Amighetti's and Adriana's, but there is good food everywhere.

OK, first I've been resisting this thread because I after reading it now I want an Italian Hoagie for breakfast!

But are some of you animals?!?

Talking about Italian Hoagies from supermarkets or Subway???? Va Fi Napoli!

People give Jersey a lot of crap, but trust me we know how to make Italian Hoagies.

PRIMOS is the place around here! Perfect hard crusty Italian bread, fantastic cold cuts and cheeses. They don't just have ONE type of Italian - they've got a half-dozen. You can have it mild, sharp, old style, you can have it off their freakin Diablo menu!

https://www.primohoagies.com/primo-menu.php

mmmmmmmmmmmmmmmmmmm mmmmmmmmmmm

Now someone mentioned Grinders. Ohhhhhhh do I have a childhood memory of them. This little place in Cape Cod. We'd come off the fishing boat in Harwich (by Thomson's Clam Bar) and stop at this shop on the way back to Chatham. We'd get Italian Grinders with the works and have them toast em in the pizza oven. The lightly toasted onions and meats, OMG... I can smell it now. Perfect.

It is all about the balance of the roll, quality of meat and cheese, and of course quantity......

Been all around the world, and the best "Sub" call it a Hero, Hoagie, Zep, Grinder, is generally found in the greater NY/NJ area. Simply the best. Subway or Supermarket?? osse faba, non c'č modo  cazzate...   Thankfully, I have two shops in my area that make great Italian Hero's. Key ingredient to any self respecting Italian Hero is Mortadella, Genoa, Hard, and Spicy Salami, Prosciutto di Parma, and Provolone, topped with spicy and sweet banana peppers, onions, oregano, salt/pepper and a dash of olive oil.....

If in the DC area, and hankering one, try https://www.italianstore.com/sandwiches.html  in North Arlington, or https://theitalianplace.com/ in Old Town Alexandria.  Guess what I'm having for lunch today............  :food:

Except for a real Philly cheesesteak,  Po boys and muffelattas have largely replaced subs or grinders or hoagies or whatever in my world.

Back in 91 when we lived in Chicago, there was a small Cajun/creole shop down on the Loop (actually up on the 7th floor) called Heaven on Seventh.  My favorite thing on their menu was a soft shell crawfish po boy, which my introduction to po boy sandwiches.  Very cool.

We have good burritos and tacos here in Santa Fe.  Subs, grinders, etc. not so much. I grew up on the east coast and miss those.

You can't get the ingredients to make 'em here either.

I remember my first case of US culture shock in my 20's. I was riding back home from CA to PA and somewhere in the midwest I stopped into a place to get a Sub. When they asked me about cheese I happily replied "Provolone please" to which they responded that not only did they not have any, they'd never heard of it.

The Sandwich Man in Harrisburg #8 Super Combo

Or a Italian Special at South Philly Hoagies

Or a bit more local Patch Valley Market. Ham, cheese, L/T/O/O&V and hot pepper relish. $7.50 and big enough to feed 2. They also have homemade apple dumplings (4) the size of a softball or a pie plate full of iced cinnamon rolls for $4.50. Dinner, dessert for two  and breakfast treat the next morning for $12.00

For a chain store, I always thought the NYC/NJ place called Blimpie was way better than Subway. Unfortunately they have dwindled in size over the last 10+ years.

Hands down, the best sandwich I’ve ever had is from a place called Melampo in NYC. The original owner was the equivalent of the Soup Nazi and that guy was a pain in the ass but his sandwich’s were great but the new owner is not that guy.

Subway makes a great sub they way McDonalds makes a great burger.

Subway and McDonalds. If you like/hate them in one city, state, country, You would like/hate them everywhere. But...both are safe road food for the most part.

There is a chain convenience store out here called 7-11, like a Caseys, Am/PM . They have an Italian sub made by somebody and then the 7-11 logo on the label. They have had a few versions including a deluxe with a sauce on it. They "used" to have a foot long one. The normal meats and cheese as well as sliced peperoncini. I would grab one and bring some red wine vinaigrette and split it with my friend when we go fishing for lunch. Didn't stuff you, but kept the belly from being hungry. If we went for a 6am - ???, one sami each to make lunch and dinner for about $4 per sami.

I was being polite about Subway, the subs are generic with bland deli meats...McDonald's is only when there is nothing else , like at night on a road trip... Many quickie mart gas stations can make a reasonable road food sub if it's fresh.

I just had to jump in on this one, I think it’s safe🤔😂
My wife is from Millville NJ (southern jersey) as she calls it, I’m sure Kev M knows where it is😉
She always says Jerseys had the best subs snd pizza on the planet because of a special blend of flour imported from Italy. Her parents use to go to a little sub shop called TERRIGO’s and that the short round Italian owner “dude” wore about 30 pounds of gold chains.
Does this sound familiar to any of youze Jersey guys?

Now that we've veered a little off subject, whenever I travel, I like to try local diners, restaurants and local chains that aren't here.

The Do's: are Imo's Pizza (St Louis), White Castle (in the Midwest)....certainly Ray's Pizza, Hallah Guys, and Katz Delli (Manhattan), Dungeness Crab on Fisherman's Warf,  Oysters at Acme Bar (New Orleans), there are plenty more and I can't name all the diners.  Eat at anyplace in San Antonio TX.  BBQ beef in Lockhart TX, Arthur Bryant's BBQ in KC, Duke's Burger Honolulu.

The Don't's:  In and Out Burger (Cali), Taco John's (KS).

I spent the first 25 years of my life in NJ close to NYC... Yes the best subs and pizza... If you include NYC, the best food in general in the USA with San Francisco a close second.

Look I'm a proud NYer, born in Manhattan and raised between the boroughs and LI.

But "The best"?

Nah. I mean there's great, there's awesome.

But there's awesome all over the world too.

If I had to pick one culinary city in the world I'd probably go for New Orleans. You've got French and Creole influences with southern home cooking. So much goodness.

Asia is full of unbelievable cuisine too, but Cajun holds a place in my heart.

Italian is fine, but there's a lot more out there ...a LOT more.

This may sound odd coming from a Jersey guy,I don't care that much for Italian food  outside of subs ,pizza or a Ting a Ling, that don't really represent Italian food.
My comment was meant that in NYC or SF you can get all the great foods the world prepared in the best way...I would like to try New Orleans...but my diet is limited now so I can just imagine...

Coming from an Italian family I like/prefer a lot of foods you wouldn't find on the menu in a NJ/NYC pizza place.

You want to hear something really weird? Down here in south Jersey I have problems finding really good pizza and even the Italian food is hit or miss. Maybe there's too much which leaves room for mediocrity.

I definitely had better pizza in PA, not everywhere but definitely some better examples.

That, right their. My favorite Publix sandwich is their Mojo Pork on a multigrain roll with cucumbers, onions, spinach, southwest sauce and just a touch of green peppers. It’s nearly sandwich perfection.

With a season cooking at Commanders Palace- arguably the most significant influence of my culinary path- on my resume, New Orleans is certainly my favorite. The city simply IS food and music.  Other cities may have great food in general and a specific dish or specialty, but it's not the same instantaneous concept of the whole thing like NOLA.  It's hard to describe or comprehend until you live there.

The first time I had a "muffa-what?!?" after I got to town, it set a new benchmark for me.  A fried oyster po boy or a regular muffellata (ham and such, NOT turkey) are my favorites.   If you're out in the rest of the world and need a convenient muffellata, the Jason's Deli chain has a pretty good one.

But life is too short to be a food or beer or wine or etc snob.  We are incredibly lucky to have easy access to good food and drink at our discretion when so many around the world don't.   Eat what you like and be happy.

Best/most nostalgic sandwiches I can think of in my life:

Pork roll/taylor ham on hard roll (jersey shore trips to see grandma as a kid)
fried flounder on hard roll (jersey shore again)

chicken finger subs (buffalo, NY staple)

croque madame from any good French kitchen

roast beef po boy from Guy's in New Orleans

BB, you and my wife would have much to talk about as she spent her teen years on the “shore”, why y’all didn’t call it the beach IDK?
She was raised in Millville and she and her besties hung out at “Cape May, Wildwood and Ocean city”. I have to take her back up there every few years to get her “jersey Fix”!
She also complains that the Subs “in the south is not as good as ours were”
I won’t even go into those disputes 🤔😂

Title: Re: Why are Deli Subs better than homemade ones?

i've got very few working tastebuds but I like to daydream about food, so okay, would somebody tell this European what's in an American Italian sub.

I dont know what the standard is (esp in the NE), but I made mine with:

Ham
Salami
Cappacola
Provolone Cheese

Lettuce, Tomato, Onion, Pickled Peppers, sub dressing (basically a red wine vinaigrette)
