Rear shock load adjustment

Something I have never ever given thought to, but are the rear shocks adjustable and specifically, do they need to be adjusted if you have a passenger?

Typically yes, you should increase the preload and if available, damping to account for a heavier load. How much will depend on your particular bike and how much the suspension sags under the extra weight. On my V85TT I checked the sag pre then post load and added a couple clicks front and back to compensate.
