To celebrate pi day, I made a shoofly pie--it's a Pennsylvania Dutch pie made with molasses.Rich A
But do we all know what March 15 is? A very special day.
My wife like wet bottom shoofly pie, me just like with scrappel having gone this far in life w/o trying no sense trying now. Besides I'm not eating anythgin made with mole asses.
Achieving the proper wet/dry in a shoofly pie is a magical thing. My wife is good, but my mother-in-law is still the best to hit that exquisite barely medium rare center. The only thing better than good scrapple from Shady Maple followed by her perfect Shoofly pie & rocking coffee for breakfast is when MIL makes stuffed pig's stomach for lunch.All of a sudden, this bowl of oatmeal for breakfast is looking kinda lackluster...Edit- Just mentioned this issue to my wife- she says she's planning to make a couple of shoofly pies asap to take camping. Very cool!
Hog Maw used to be a fairly regular dinner for us. Stuff and sew up the belly the night before and then into the crock pot in the morning. Get home from work slice and serve with ketchup and butter bread. Cleaned stomachs used to be a couple of dollars now they are $10 or $12 and sometimes hard to find. While I like hog maw and the stomach does add necessary flavor to what would otherwise be plain old sausage, potatoes and cabbage It something we only eat maybe once a year now.
Pig stomach is definitely a 2-3 times a year treat for us, not a staple. I was happy to find a butcher shop here in sc selling cleaned pig stomach. Then I was bummed to see they simply bandsaw the frozen case into portions, so using them as a casing is out unless you buy an entire 25lb (frozen block) case..... Asked them why/for what recipe but they didn't know. It probably goes into a ground product from there but like you said it's not cheap anymore. Plain stomachs are available at Walmart occasionally, but not cleaned ones.Thankfully, as long as we've got King Syrup and good PA Dutch dark brown sugar, shoofly pie is always in season..
