The best I've had was with shellfish and a wonderful shellfish sauce.    :drool:

I make my own lemon/black pepper pasta from scratch, add Veal Saltimbocca with lemon butter sauce and lotsa capers.
Kids love it. Me too, hahahahaha....

or nice grilled/marinated octopus is always tasty....

A specialty of my wife's grandfather's town....Canicatti, Sicily

OMG we make this often...with a nice Vincole Miceli Nero vino

Beef pounded flat, stuffed with....in layers... mortadella, Caciocavallo cheese, sliced hard boiled eggs and parsley...then rolled and tied with chefs string....seared in REAL olive oil then simmered in whole tomatoes, onions and the remainder of the searing pan's liquid.

this is genius...who would stuff meat with meat, eggs and cheese?

There is this little Italian Restaurant in Floyd VA ,  Mickey G�s http://www.mickeygsbistro.com where they make the best Bucatini alla Puttanesca.
If you are ever in the vicinity you've got to try it  (The VA rally is held nearby)

Growing up eating my Italian grandmother's cooking, I can't think of an Italian dish I DON'T like.

I have been doing our household's cooking for many years, and I have tried my best to replicate my Grandmother's recipes.  Unfortunately, like all Italian Grandmothers of that era, the recipes were all in her head.  I have been successful either finding similar offerings from recognized cooking sources, or via trial and error in my own kitchen.

All that said, two of my favorites are Bucatini All'Amatriciana and Calamari Ripieni over linguine.  Either of those served with a side of rapini and I'm set.  Pair the bucatini with an Aglianico and the calamari with an Orvieto Classico.

Eggplant parmigiana with Sicilian gravy. Son in-law's grandmother's recipe. We do it here.

The best pasta for me is just Angle Hair with garlic, extra virgin olive oil, red pepper and a touch of lemon juice and of course some parmigiana on top .

IIt is a tomato sauce seasoned and with the combined meat flavors. It is cooked with meat, (pork, chicken and beef) but the meat is strained out.

I also like to fix a Caprese Salad with olives and salami of course with a loaf of bread.

It's very Sicilian--in fact, specific to Palermo itself--but we make a pasta al forno with a condiment of chopped veal and chopped beef shoulder, very finely diced carrots and celery, peas, red wine, and a little tomato sauce to hold it together, baked with anelli Siciliani pasta (difficult to find, but Divella makes it). Maybe a bechamel sauce on top.

Definitely comfort food, not fine dining, but dang it's good on a cold day with a glass of red table wine.

Unfortunately no photos available, we always eat it too fast.  :tongue:

Chicken gorgonzola.  Used to be a place in Austin, Bella Luna, that had the best Italian food and service I've ever had.  A New York Italian chef buddy of mine even said how good it was.  A bit pricey but darn well worth it, alas, they didn't make it; though I'll probably live longer.

My moms lasagna. She came to this country in 1948 and has not made it in a long time, but she did help my wife make her recipe and gave it her approval. Of course there is always the side dish of sausage and meatballs.
