Very cool- details?  Regular wood or pellet smoker, what kind of wood,?  Did you do in your BGE?

No turkey for us this year, promised the wife a Brisket! Only two of us, so looks like brisket for thanksgiving and probably the next week. I wont smoke a flat without a deckle on it, and the smallest one I could find was still over 9lbs. Rubbed it down with mustard, and put a thick crust of salt and 3-pepper blend (black/szechwan/allspice) on it last night.  Going to throw it on my side firebox in about an hour and it will roll until the middle of the night...

1st it was brined in salt and sugar water, cherry smoke on the BGE👍

My B-I-L fries the turkey, they usually ask me to carve it.  Not sure if I feel up to going to the family Thanksgiving tomorrow.  Almost feel myself today but don't have a lot of stamina.  Gotta say beware of some of those viruses out there guys. 

John great looking turkey.  John's an expert with that BGE and cooks some of the best 'que you'll get anywhere.

I gave up on my electric smoker when it got infected by mold. 

Instead I found this pellet smoking tube.  It'll go for 4+ hours.  Puts out lots of smoke in your gas or charcoal grill.  The heat in the grill is independent of the smoke, so you I can cold smoke it I want.   Tonight I'm going to cook salmon.  First I'll cold smoke it for 20 minutes.  Next I'll take it off the grill and get the grill hot.  Then I'll cook the fillets for about 5 minutes until done. 

Having said that, my gas grill + tube, still not as good BGE.  But it is pretty easy.

I'll be doing mine early Thurs morn.  I have a CampChef pellet grill.  6 years with it and I love it.
I'll use a Turkey Cannon (like beer can chicken but sized for a bigger bird) filled with white wine and herbs.
They turn out GREAT.
