With peaches in full swing it time to make a little sweet/spicy grilled chicken.
1/2 lb peaches
1/4 cup each apple cider vinegar, white sugar and diced onion
1 pad of butter
Minced garlic and ginger
4 habanero with seeds and pith
Sweat the onion in butter. Ad in garlic and ginger and cook for about a minute until aromatic. Ad in the rest of the goodies and simmer for 10 minutes. Then use and immersion blender to smooth and simmer a few minutes more. Let cool. Use to baste the chicken when grilling.
