I have 2015 V7 II Special with only 8000km that has cold idle problem
The cold engine starts fine but idle revs are very uneven going up and down ...
Engine doesn't want to pick up revs and sometimes dies
It starts immediately and then runs fine
When the engine get normal working temperature it runs pretty well
The spark plugs are completely new
What could be the problem?
Where to start?

What condition is your air filter? Have any moisture clogging it?

the plug caps are very delicate on that model, were you very careful when you removed and replaced them? If they are damaged, they could cause an ignition problem.

Not a sign of any moisture...

The caps looks OK to me
I didn't notice anything wrong with them...
Although...I will check them again tomorrow

In the US there was an updated map for that bike.
Smartest thing to do is put on a Beetle map.

Generally, loose valve settings make for a better idle. That might not be the answer, but it would help.
Refresh my memory, does this year have the fast idle lever for cold engines, that pushes the throttle open slightly?

Our dealer installed the new map and it ran great,original map not good.

I had similar issues with my 16 Mk. II . I believe it’s going into closed loop too soon . More miles help . As does a beetle map . I went in a different direction . As I’m not terribly computer skilled I went with adjustable O2 sensor “spoofers” from AF1 racing & gutted the exhaust of the cat converters . That said the bike in only for off road use ( wink wink ). It runs much better & no cold start issues . AS usual Your results may vary!

I recently had a similar issue with idle—seems to start up fine, but then after a moment would be a bit erratic—a little up, a little down, and sometimes down low enough it shut off. After warming up it would be fine. The kicker—I have a beetle map. It’s only ever happened so far when it was pretty cold out. One time I found my air filter pretty wet due to some rainy days causing the seat to soak up and leak water down the front. I experienced the problem a few times, but it’s not constant, hence why I thought it might be moisture.
Maybe it’s in the fuel? How long has the fuel been in the tank? Is it fresh? Is there a vacuum that’s perhaps causing the fuel pump to not draw appropriately? Pop open the gas cap once and try running the bike after?

Check for oil residue in the airbox. If oil gets into the MAP sensor or idle stepper ports, all kinds of weird things can happen.

No fast idle lever...
Gang, so Guzzi added an "electronic" fast idle when cold, like a modern car?
That's one less thing to do when starting, but I kind of like the manual approach. Of course that's a slippery slope. Soon, we'll go back to a manual ignition advance, etc.

Yup , both my small blocks have the “fast idle”as part of the program . My V7/850 is way better than the MkII , no issues at all . The MkII is better once sorted also .

My 2015 started to do that. Turned out the battery was on it's last legs. A battery load test would help confirm or eliminate that issue. If it's the OEM it may be at the end of it's service life.
