Title: Gizzards & hearts

Gizzards and hearts into a vac bag with a few pads of butter. Vac'ed and double sealed. Going to sous vide these for 24 hours at 140 degrees. Tomorrow after work I'll pull them from the SV bath trim and then skewer them. Then move outside to grill them over red hot charcoal and brushed w/ Soy Vay Veri Teriyaki.

Going to serve them with a side of Porterhouse about 1-1/2 thick and butter browned mushrooms.

You have to check each location for Kentucky Fried Chicken, some sell fried chicken liver dinners.  They are damn good, at the least the ones I have ordered were.  My Wife thinks they are the most disgusting type of food one could ingest.  I always counter with, "It was a brave man who first ate an oyster."  I will also eat my weight in those, raw, fresh, with a touch of cocktail sauce.  One final observation, raw chicken gizzards,  hearts, and livers make the best catfish bait in the world..........

Hopefully the 24 hours will soften them up. Shooting for something close to what we had years ago I Phili at a Japanease restaurant, yakatori gizzards.

Also Bresaola is done and I believe I owe you a piece. Cool weather I’m willing to vac pac and priority mail it should be fine unrefridgerated for a day or 3. It’s well cured and tasting fine.

Not a liver eater usually.  But once, I stayed a weekend with some beef farmer friends.  We stayed up really late - they were slaughtering a cow and wanted the cool late nite/early AM to kill, gut, skin and hang the beast.  The liver was still warm when it hit the fry pan.  With onions & eggs and fresh baked bread it was by far one of the best b'fasts I have ever had.

I make my own dog's food. I add Gizzards & hearts to the boneless chicken breasts, fresh veggies, and barley.
They love it.  :grin:

In my area, NW Ct., I can find boneless, skinless, chicken breast for really good prices. Sometimes $1.49.
I've been doing this for a long time. The recalls, and problems with canned dog food ain't worth it.

Only thing I need to know is do you also want a sample of some Lonzino and maybe some ghost pepper cinnamon beef jerky?

I started salivating as soon as I read 'Ghost pepper and Cinnamon'. Yes, thank you Lance; I'd like to try the Jerky, as well as the Bresaola.  That would be terrific. Thank you very much.

I've never bought chicken to feed to a dog.   Do you cook it first before you mix it up and feed it?

Yes, we boil the thighs. save the broth and swish a little in. She's been a picky eater her whole life but not with this recipe.

My sister in law has a wolf sanctuary, no cooking needed for the wolfies, 1/2 raw chicken is gone in about 2 crunches.

Yes, cut it into smaller pieces, boil it. Let that cool, while the veggies and barley cook.
While the veggies cook, I break the chicken down, one of my dogs lost part of his lower jaw to cancer.
When everything is done, I mix it together. Then put it into one gallon containers, and freeze it, taking it out as needed.
I usually make at least ten gallons at a time.

Just for perspective...in Japan, they call it YAKITORI...and it is one of my favorites dishes, with a fresh draft beer. 

They consist of:  Chicken hearts, kidneys, shoulder, butt, stomach, liver...and anything else from the chicken you can imagine! 

Grilled with a savory sauce...good stuff! :cool: :thumb: :smiley:

The Japanese don't eat dogs and cats...but they do eat horse meat....

However the Chinese and the Koreans do!! :shocked: :shocked: :shocked: :shocked: :shocked: :shocked: 

In China, if it "walks, crawls, runs, swims or flies"....it goes right into the WOK!! :laugh: :grin: :wink:

Home made pet food also has a downside as its not a balanced diet and you can actually be doing more harm than good. Also is chicken or other meats really safer than premade pet food. Lots of recalls happening all the time on foods we consume every day.

I get a kick out of "my dog love's it". My dog likes to lick her ass, eat cat poop, drink from puddles or toilet, eat dead things she finds, eat dry food. Just like 99.9% of other dogs she doesn't have the most discerning palate and will eat most anything.

I understand if there are special requirements like dental or digestive issues. But if its because you have a finicky eater its most likely self created.

Dogs, Wolves, etc. by nature, have a higher level of acid in there gut tract. It's what allows a tolerance for all that really bad stuff they get into. The same is true for all wild animals, including birds. I tend to think it's the high mineral count in commercial dog foods that cause urinary tract problems. ie: bladder & kidney stones. 

I've made 'dog soup' for a long time. I add it to the dry food. I've not added the barley; been saving it for people soups.  R3~

Not a balanced diet? So between the meat, vegetables, and grain, what is lacking?
Also all my dogs get a daily dose of glucosamine.
Have you ever looked into dog food recalls?
And tell me, which is more likely to be honestly reported, human food, or dog food?
Stick to your Pedigree canned food, in fact share some with your dog.

So unless you change/rotate ingredients or add in vitamins and minerals to the base ingredients and round out the nutritional value you feed a very linear diet and not a balanced one. Simply adding chicken vegetables and a grain together does not constitute a well balance diet. Would you eat only boiled chicken, steamed peas and quinoa and truly believe your diet was well balanced? That's what your potentially doing to your dog.   

I give my dog fish oil pills. Since she's never had a heart attack they must be working.

I use multiple vegetables in my mix. You do realize vegetables, (broccoli, carrots, sweet potatoes, etc.) chicken livers, are a source of vitamins, don't you?

Back when I was an active hunter the dog and the cats were always on hand for pheasant hearts, livers, and gizzards, cut up and nuked. "A piece for you, a piece for you, a piece for Daddy..."

Jack's absolute favorite is venison, raw or cooked.   Don't know if it reminds him of The Call Of The Wild or what, but he'll do or learn anything if the "good boy!" treat is venison.

Then chicken, pork, or a little morsel of cheese.   He won't touch a "dog cookie" or any sort of fruit or veggie snack.

I agree about the "picky palate" of dogs in general though.   How a dog can spend 10 minutes with his head a foot into the rear end of a deer dead 2 days, and then pretend that he "doesn't like the taste of" ... well, anything, I don't know!

I used to use venison for making dog food for many years. Lots of good parts to choose from. Heart, liver, tongue. But the game wardens get a bit upset if you take too many a year  :rolleyes:
