I recently purchased a 2009 Norge and a friend a 2013 Stelvio.

Am I correct in assuming the tps procedure will be similar to my Cal EV?

More importantly, can someone enlighten me on how remapping works? I just want a general idea of what I need (hardware/ software), where I get it and the level of difficulty.

Looking at the 10000 feet view and from that point I will delve into the details

No, on the EV you back out the idle stop to set the TPS to 150MV. On the CARC bikes like the Norge and Stelvio, the idle stop is factory set and should NEVER be touched. (it will mess with the idle stepper motor setting).
On the EV, you then set the idle stop to the correct MV reading for idle. But on the CARC, you simply do a software reset of the TPS and it sets itself at idle.
Basically, you need GuzziDiag, and a good cable.

Remapping generally means you read the ECU. Then use something like TunerPro to modify that data. Then write it back to the ECU. Not too difficult. Make sure you keep an original copy of the ECU data to put back in case something goes haywire.
Again, the GuzziDiag site has readers and writers to read and write the data. They also have configuration files for TunerPro to edit the maps.

If you do not want to try to modify your map. Beetle probably has a modified map for your bike.

You only need download the programs pertinent to your ECU (5AM), and your Laptop's operating system (Windows, Linux, Mac OS).

1. GuzziDiag V0.50
2. IAW5xReader V0.28 (5AM, 59M)
3. IAW5xWriter V0.24 (5AM, 59M)
4. Tuner Pro from here . . . http://www.tunerpro.net/downloadApp.htm
5. TunerPro XDF Files (5AM ~ for One Lambda V1.41 -or- Two Lambda V1.40)

As Wayne mentioned, you can use the TunerPro software to alter your Map, but that's not something you can do yourself really.
You can do a few simple things, like Speedo correction, or shutting Fuel off on a closed Throttle, but actual tweaking of the Map itself is not something I'd recommend trying yourself.
There's a hell of a lot of Parameters involved, and they interact with each other in various ways.

I can thoroughly recommend both John (Xlratr) Brooks' and Mark 'Beetle' Bayley's Maps.
