Is there a good conversion kit ready made out there for 300mm front brake conversion for the Le Mans 1000?

Not anymore. There used to be a kit composed of Brembo 300 mm rotor, Menani caliper adapters, and gold brembo calipers.

I bought these discs from a board member. I had caliper adapters made and used harrison calipers cuz I had them sitting around. on a 16" wheel.

your best bet for brake discs is ISR. Acke made a custom set for my project and they weren't much more expensive than Brembo or EBC and they look wicked!

Yup.  I understand Menani is no longer in business.  eBay seller valtermotousa sold me a pair of NOS Menani clip-ons for my Corsa Record project last fall.  He said Menani was permanently closed, that they had purchased all remaining Menani inventory and were selling it.   There would be no more.

There may be a chance that valtermotousa (via their website or eBay)  have the adapters mentioned by Turin, but ?  Good luck.

you'll have to have some caliper adapters made up. Ed Milich makes adapters that are undrilled, but I'm not sure if those would work either.
