Slow cooked lamb casserole with spuds and root vegetables. Add pickled red cabbage and crusty bread, scrumptious 😋

My mom made lamb shanks quite often. We lived in Connecticut where lamb was common. I live in California now and don't see lamb in the market very often and never shank cuts and it doesn't taste the same, I don't care for it. My mom's lamb shanks was one of my favorite dinners, she broiled them in the oven.

For supper I had anasazi beans with ham, cornbread, 3 pickled eggs and two big glasses of genuwine buttermilk. I was stuffed and couldn't eat dessert.

Made some King Ranch Chicken that turned out pretty well.  Nothing except Rotel tomatoes came out of a can.  I don't 'do' soup in a can.

It is getting about time to make some jambalaya as well.
