(Frankly, I've never seen them dress well enough to consider them refined.)

As long as they do cotillion they're considered refined regardless of dress.  But remember -- emu feathers were part of cotillion for decades before 'dancing with ratites' became popular.  It's part of what made the Audubon Society.

 Emus don't dance cotillions.  In fact, they don't act very refined either.  They bite, peck, and kick the crap out of people when they get pissed.
