Title: Smoked canned oysters

I love oysters especially fresh on the 1/2 shell with a spritz of lemon and hot sauce. Tonight after playing ball with the pup not sure what to have for dinner looked in the cabinet and there are 2 cans of smoked oysters. I love sardines in oil so bought the canned oysters a couple mounts ago to try. Opened the can drained some oil spritzed with lemon and a few dab of hot sauce and OMG its nirvana. The smoke, sweet of the oyster, tart of the lemon and sour of the hot sauce is amazing. Creamy smooth texture of chicken livers. Who'd a thunk something in a tin could be so good.


I don't mayo but am going to try making oyster & egg salad stuffed avocado with Greek yogurt in lieu of mayo.


5 Hard boiled eggs peeled and rough chopped
2 stalks of celery chopped
1/4 cup Greek yogurt
2 TBLS chopped pimentos
3 TBLS fresh grated parm cheese
Black pepper to taste
1 can smoked oysters
2 avocado pitted husked and ready for stuffing


Get the cold beer, saltines and pickled hot bologna's ready.  :food:

I tried to use the smoked canned oysters, for oyster stew,  once when fresh oysters were out of season. Mistake!!! I wasted a quart of milk and a stick of butter, not very good at all🤮

And they store easily in your saddlebag.

We roast fresh oysters on the grill, just long enough so they just start to
open.  Chopped onion, cilantro, and a squeeze of lime or cocktail sauce with lots of horseraddish.

Not a good year for oysters in Galveston Bay.  Small and fewer than usual.

You'd better stuff some activated charcoal in your britches after eating that oyster and egg salad.  Somebody near you could DIE...   :evil: :azn: :wink:

No no no!
Simply one curl of FRESH horse radish root-THAT is the perfect compliment.
However, any oyster is a good oyster.  They work nicely on the smoker, too!  Fresh smoked oysters-nirvana.

There are also non-smoked canned oysters packed in water --in an 8 oz., cylindrical can -- that make good oyster stew. One of my go-to quick recipes.

1 cup whole milk
1 can oysters
< 1/2 teaspoon celery salt
paprika on top

Heat and eat.

That was standard snacking fare at my ex-in-laws. Smoked oysters on crackers. Don't know if it was a family thing or a Wisconsin thing.

It would take at least a half pint of whole milk as I like a big bowl of stew:)
When I make it from fresh oysters, I use a pint of whole 1/2 pint of whole milk and 1/2 pint of half and half. Add a pint of fresh oysters in season, I/4 stick of butter, salt, pepper and a pinch of paprika. Yum yum eat until I'm stuffed!

Don't buy them often, but when I do, it's a club cracker with a dollop of Philly Cream Cheese with a smoked oyster on the top.  Love 'em.  For the ultimate cholesterol bomb, my uncle used to lay out a Christmas buffet that included smoked oysters wrapped in bacon and baked until the bacon was semi crispy.  Of course, toothpicks held the bacon and oyster together.  I still do those every now and then. 

EDIT:  and a splash of Frank's Hot Sauce for a little added flavor.

That's what the pickled hot bologna's are for to help settle your stomach.

A bagel with cream cheese, with smoked oysters on top, and broiled til the cream cheese is brown at the tips...

Yea I realize I cup is 1/2 pint, that's why I add the other 1/2 pint of half and half:) however I don't eat like that often. Every now and then in early winter when I come in from cutting wood and chilled to the bone, it's just comfort food and I want to feel FULL and satisfied 👍

My grandma used to make oyster dressing with canned oysters for Christmas. Not sure if smoked. Mixed with crackers, milk, butter & black pepper. Baked til steaming hot.

Oysters..My friend can't stand the (slimy little bastards ) His words exactly. I am guessing he knows a bit about them too.. He built this machine to clean the shells automatically. It was was built off the top of his head. zero prototypes was made. 100 grand in parts, and they said just built it.  Work perfect too..since 2012
