Headed to Nova Scotia first week of September. I don’t like to commit to campgrounds and the stress to get to one particular place on time.
Do the campgrounds fill up in Nova Scotia and Canada like US State and Federal Parks? Should I try to reserve some spots? Tent camping.

There are many "Welcome Centers" where people will go out of their way to find accommodations for you.

NS provincial parks: https://parks.novascotia.ca/content/camping-parks-0 (https://parks.novascotia.ca/content/camping-parks-0)
National parks in NS: https://www.pc.gc.ca/en/voyage-travel/promotion/nouvelle-ecosse-nova-scotia (https://www.pc.gc.ca/en/voyage-travel/promotion/nouvelle-ecosse-nova-scotia)
There will be private and municipal campgrounds too, if you want to look them up.

We rode through New Brunswick, Nova Scotia, Cape Breton, and Quebec (4 or us on two bikes) in June a couple years back. We made no reservations beforehand for hotels, B&Bs, or campgrounds, and we had no trouble finding available accommodations on a daily basis.

You should be fine without reservations in September. Labour Day weekend may be busy with some campgrounds full, but otherwise not a problem. We seldom reserve, especially through the week. The holiday weekends are the only times I'm tempted to reserve, but again we tend not to do so until one or two days out. If one campground is full, we just look further down the road, and we don't leave it to late evening to find a spot; we try to settle by 3:30 to 4:00. In September the evenings will darken early. This isn't Yellowstone, Yosemite, etc.
Enjoy your visit. If you need tools, garage, support or whatever when you're in the vicinity, get in touch. (Located half way between Halifax and Chester.)
