My 79 G5 custom build is about to enter the assembly stage and I’m all over the place on which direction to go. I have the stock G5 rails with foot pegs, and also a set of floorboard rails. I am thinking of first setting the bike up as a modified v7 sport / 1000s type. I would have to get a tank, seat and proper rear fender. What would be the best lower rails? Would the G5 rails put the pegs too far forward? I haven’t really thought out the bars, but maybe superbike bars. Are v7 or lemans lower rails hard to source? Thanks.

It depends on what kind of riding style you want on the bike. When I build my sport I thought tarozzi rear sets would fit and look way better than g5 like pegs, but when riding they turned out not to give a great riding position (IMO). So I made t3 style footpegs which differ little from the position the G5 pegs are. I cut off the foot boards from Cali lowers to have Le Mans type lowers. If you do the same, think about if you want to keep the very well working police stand.
Original g5 footpeg lowers are (at least in Europe) very hard to find so I wouldn’t modify them.

Can't offer advice about Lemans specifics but V7 Sport foot pegs mount upon each end of on a separate bracket, not on the lower rails. I'm not tall or big belly (5-9+, 36 waist) but I don't like to ride on the front pegs with the plain tommaselli clip-ons. Too cramped. Very cramped if you're riding 2-up. Probably OK with upright bars or original swan necks in upright position. Rear pegs are more comfortable. Making a bracket for rear sets & controls located about 2/3 between stock front and rear peg location, just below the rear attachment bolt, would probably be ideal for me. Thought about doing it for years. Just haven't done it yet.
If you went that way, you could make the footpeg bracket fit your preferred position. But I wouldn't expect finding original V7 Sport or LeMans lower rails would be a budget-minded or simple task.

Thanks for the feedback. I’ll set up the floorboard and G5 peg lowers as alternatives and see how I feel about those to start.

I swapped my 78 G5 pegs for a set of floorboards that came from a T3 floorborad model.
The customer of the T3 didn't like floorboards , Soooooooooooooooooo oooooooooooo they came home with me.
I picked the floorboard setup at Ghost Motorcycles on Long Island back in 1980's.
Enjoyed the hell out of that swap .
Mileage for that bike is in my signature.
