Why do these rims attach like they do, is there a mechanical reason?

You can attach the rim to the hub at different points to widen or narrow the rear track. Most of the time, people just attach them at the widest position for greatest stability. But in some situations, it's advantageous to narrow the rear track to fit between rows or in certain areas like a barn where you may be cleaning manure or ??

It’s to adjust the wheel track width so you don’t squash the tomatoes. Did you get a new tractor?

No I didn't get a new tractor, we have a bobcat that does most of what we need.

We pulled it out with a 1997 Ford Explorer and a long chain.

you will also notice that the rim has an angles rib the the wheel clamps to. This is done so that the moving of the rim in an out can be accomplished using the tractor drive. (no need to jack the wheel up and slid it on the axle.
