So zero to sixty in 2.5 seconds, does this mean that it is still in 1st gear? Redlines at almost 12,000 RPM.

No doubt. Most of the 1000cc sportbikes will do close to 100 mph in first.
Anti-wheelie gearing no doubt.
I recall a 0-60 time of 2.3 seconds for a GSXR1000, perhaps around 2006.
IIRC, the Kawasaki Eliminator 1000 posted a 0-60 time of 2.15 seconds in some magazine around 1987.
I suspect that bike only did about 60-70 in first gear.

Yes in first gear. My Sons Yamaha R1 would do 95 mph in first gear, before hitting redline. Scary fast machines!

My Suzuki GSX-S1000GT will go about 90 mph in 1st gear and well over 100 in 2nd gear. 6th gear is the set it and forget it gear. Click in 6th and the bike will run from 35 mph to over 150+ mph without any complaints. Amazing bike that eats miles.

I don't know anything about this particular bike test, but there's nothing wrong with doing a drag-race start in 2nd gear.
A friend who raced a Ducati F-1 in the 1980s routinely started his road races in 2nd and was rarely beat to the first turn.

My 1984 V65 Magna claimed 0-60 in 2.2 seconds. It hasn't moved in years though
