On Sunday, I made an omelet. A Denver omelet, with mushrooms, bell pepper, tomato, onion and cheese. Oh, it was sooo good.
Most Sundays, I make us French Toast. But I needed an omelet. A Denver omelet.
In Germany, and most of Europe, breakfast is lunch meats, cheese, bread and maybe some fruit. Interesting as a visitor, discouraging as a resident.
I need to intoduce my wife to biscuits n' gravy soon!

What is it with you guys and Food ? when we were young, it was Bikes, Beer and babes. Now it's bikes and BBQ :D
There is nothing like a good omelet though, Hot onions, bacon, farm eggs........... i have to go cook something now :drool

But I'm finding it hard to find a decent omelet pan. Must be nonstick, adequately sized for a two person omelet, and have shallow sloping sides. Seems all manufacturers of late have lost sight of the importance of that last feature.
Had a great pan but Teresa has taken her toll on the nonstick by using metal utensils. Mars/Venus again.

Mars&Venus, not only metal utensils mine doesn't understand the concept of seasoning a pan. Washes the living snot out of them. I should take all the scothbrite out to the shop and wash out some tractor axel hubs.....

No-stick cookware is banned at our house. Properly seasoned cast iron is healthier. I do my own laundry without those stink a$$ drier sheets the wife uses.

A two-egg omelet with mushrooms, green/red peppers, onion, ham or bacon, and the cheese-of-the-day is our standard breakfast these days.
We pay $50 or so apiece for either "Calfalon" or "T-Fal" omelet pans, which have exactly the right "shallow sloping side" configuration you mention, and are "non-stick".
HOWEVER, the "non-stick" coating (I don't know if it's still Teflon or not these days) lasts about 6 months and then starts degrading and chipping off, although we never touch it with a metal utensil.
I do know that the omelet-making dude at the fancy Sunday-brunch place in the next town over does not use a non-stick pan to make his 70 omelets a day. He uses a plain steel (not black iron, shiny steel) pan which he seasons at the start of the day with steel wool and hot oil, and when used over the right heat, doesn't stick once until it cools off. I wish I could learn how to do that.
Meanwhile, we just buy new non-stick pans when needed ....

Put table salt in your non Teflon shiny silver skillet and rub it in with a paper towel before making your omlet. I like to add a little half and hAlf and a dash of flour for added fluffiness.

You guys have all forgotten the most important ingredient....green chile :D
And, yes, I find that if you get a GOOD stainless steel pan it works just fine, seasoned and oiled. I think olive oil works best but YMMV. It took many years to get the wife to keep them seasoned but she's an expert at it now.

You New Mexico guys put green chiles in coconut custard pies, chocolate truffles, and baby formula ..... I like green and red chiles but they DO have their place .... !

And, yes, sometimes I have a meal without any green chiles :)
SPAM was made for the Brits during the Blitz. The folks at Armour were trying to process as much pork as they could to feed them. One of the production folks came up with the idea of taking all the cut offs and compressing into a can. SPAM, Specially Processed American Meat (IIRC).

Any one want some Dragon Chilis? I was able to winter over my one producer and now have new blooms and fresh hotties. Not many but the seeds sprout and these babies are wow. Great with ice cream. ;D

I have never heard that story before but I know it was introduced to polynesia by the military in WW2 and has been a favorite ever since.
BTW, I buy it by the case.

1. beat the hell out of 3 - 5 eggs, add salt and pepper
2. dice some onion, add salt and pepper
3. chop up some Gouda Cheese
4. chop up some Smoked Salmon
5. put some butter into non stick skillet
6. throw it all together, cook and fold
7. eat it
so far I've only seen 3 recipes here

My way of doing that is to put it all in an empty 4 lb peanut butter jar, add a splash of milk, put the lid on tight
and shake it like a paint shaker. The milk and shaking makes it rise up fluffy.

OK John you want a recipe .
1. 6 OZ vine ripened beefsteak tomato sauteed in olive oil and a garlic clove
2. 4 OZ grated extra sharp N,Y. cheddar cheese
3. Whip three eggs , blend in 1 OZ milk .
4 Cook it , preferably leave it a bit soft
5 Season lightly with some lemon pepper

Alternatively , and this recipe is not recommended for any one with a heart problem .
Dusty's heart attack in a pan
1. 4 OZ cream cheese
2. a splash of lemon juice (lime is also acceptable)
3. 2 OZ bacon , crumbled , extra crisp .
4. Three eggs whipped and blended with 1 OZ half and half
5 soften cream cheese a bit in microwave , blend in lemon (or lime) juice
6 Cook it
7 Season lightly with cayenne pepper or a touch of real Tabasco
Best served with French bread , lightly toasted

Never seen a recipe for an omlette, Don't you just throw in what you have? I like bacon and home grown tomater, but I'll try that olive oil garlic thing Dusty's layin' down.

If someone will bring a big enough pan , and everyone will pitch in on the expenses and help just a bit with prep , we can have a giant omelette at Cedar Vale :D I once cooked a 3 dozen egg cheese and tomato monster in an oven . Fed an entire restaurant crew one night after work , and a few of them had a serious case of the munchies . Hey , it was the '70s , and a college town ;D

Three eggs
Pepper Jack and Colby cheese
Bacon
Green Chile :D :D :D
Can substitute Carne Adovada or Chorizo for the bacon. Those each have their own little recipe too ;)
Oh, and if you screw up the tossing of the omlet, just chop it all up and put it in a flour tortilla. Instant breakfast burrito :D
