They look a bit rough. I'm not interested in those but how would one check if they are structurally sound?

Fronts, the harder ones to find.  Think crash.

That seller has a few samples in his list.

The rim has an inner and outer half.  I suspect that even if one of the halves was compromised, the other would still hold air.  But the only test I know of is to mount some rubber, inflate, and immerse in water.

Those rims had a clear coat that got crappy in a hurry, especially if you cleaned them with certain compounds.  They could clean up nicely.
