I was going back into the Wildguzzi 'my messages' storage to check on some things, and I noticed that I have only one message in my "sent" folder - even though when I look at my "inbox", many of the messages are marked as 'you have replied...' and so on. Where are the copies of the replies I sent stored? Things that make you go "Hmmmmmm...."

You don't want to know, be careful.
-
You can click "Keep a copy" in your Sent Box at the time of your reply so you can see a record if need be.
-
If you go to "my messages" and hover your mouse over "messages", a menu pops up with "sent items".

Most messaging systems keep a copy in 'sent' by default - does this board not do so?

That's where I found that I didn't have any record of the messages that had been sent. BTDT, thus the question.
"I looked, and there they were - gone!"

I'm sure they are...but not with access by the user. Probably Admins could get them...I should imagine.

As far as I know, sent messages aren't saved unless you check the save box.
-
On the top of the forum page, click on "Profile" button, and then hover over the "Modify Profile" button. From the menu that is presented, select "Personal Messaging". Look through the radio buttons that are presented and click on the one called "Save a copy by default". Then after, each message you create/answer will be saved in the Sent mailbox. If that radio button is not currently selected, none of the messages you created have ever been saved except those for which you explicitly asked to be saved.

Now that I can understand - although having done usability testing, I have to say this is the only system I've run across where that setting is not defaulted to 'on'. And I've used electronic mail and messaging since usernames were limited to seven characters

It could have been turned off by default in an effort to save disk at the server.

Back in the early day's of sport-touring.net their were some strong rumors going around about 'mods' reading peoples private messages.

They're purged to save space on the server unless you choose "save a copy". I set this up about 7 years ago after a security flaw was identified by the software maker.
Even saved copies can be purged automatically if space becomes an issue, so I've always said "if you need it, print it or save it locally".
Each member is allotted a certain amount of space for avatars, PM's, etc. If they go over that space, the system removes something auto-magically.
