Does anyone else find their V7 Stone foot pegs to be a bit on the short side? I seem to find the middle of my feet resting on the tip of the foot peg rather than centered on it as other bikes I've owned. I'm curious if there are longer pegs out there that might improve my comfort. I noticed that Moto Guzzi offers an extended shifter peg and brake peg that might be helpful as well.
Will the V7 Stone take a universal peg or is the design proprietary?

I was having the same issue with my Norge.
With the brake peg. So i pulled the cam drilled it a little bigger and tapped it.
then longer bolt and a nice and a hollow tube. Blue locktite and good to go.
been on the bike for about 3 months and nary a issues with it

The foot pegs were fine for me, but I did alter the shift lever, as you asked about.
Opposite problem for me on the V7 Classic. Shift peg was too far away, so I drilled the lever and another peg.

I always double up on the shifter peg:

this way I don't need to lift my foot off the peg to shift both up and down (which for some strange reason makes my shoulder hurt)
I have the bottom one more towards the center of the bike so I don't accidentally touch it, I need to turn in my toes to operate it

I made it of thin alu so that in case of a slider it will just bend out of the way and not damage the main shifter/axle.
