I can't wait. Pancetta Arrotolata wrapped peaches and bresaola sliced paper thin on slices of hard bread drizzled w/ olive oil for starters. Main course pasta carbonara with home cured guanciale.
Let me know how many plates to set?
...and of course, AFTER a big distending dinner, I would bring..."the DIGESTIVE"...my home-made and chilled "LIMONCELLO", which I am brewing as we speak!! :thumb:  :1:

Yum! Nice work.
My wife and I had a homemade bresaola pizza for dinner last night (the pizza was homemade, not the bresaola), and it is one of our favorites. Homemade “00” crust, fresh mozzarella and thin sliced bresaola, nothing more. But we top with fresh arugula when it comes out of the oven.

I'm exhausted and hungry just following the tale. The man is inspirational!
I'm smoking 4 sides of ribs, beans and making a beet salad, Asian cole slaw, grilled asparagus and corn bread. Guests will bring wine and Lemon Squares. Another plays in chocolate. Bitter, cayenne laced Belgian chocolate w/rice crispies. Thin postage stamp size. Great with cold grapes or - - - - Happy Holiday, R3~
