The deep recess you found before taking it apart would worry me. The nominal dimension is to have the outer body flush. A mm or so either way is fine. But recessed several mm might hint at some damaged linear component such as the rod or its receiver cup in the pressure plate. Sounds like you have either

All that is true, adjuster & pushrod do wear a bit
But issue here is plates a bit thicker than oe
I just fitted newfren plates yesterday in my uk bike, after 20 years of surflex I never liked but am only here for summer so didn’t change them until slipping on Monday
Exact same issue, new plates .040 thicker each plate than worn ones
I just did what I always do, one extra washer in thrust pack
Am now 350 miles away, is perfect
Going to Italy next week, if it needs adjusting, is loads on adjuster now, removing washer very unlikely but simple if I have to.
Have done it to my other bikes and others many times, simple and works
