Hi All, 2-1-21
I ride with friends in the mountains in NC and NYS and due to -, we do not stop at places to eat lunch. SSSoooo, we've resorted to 'plan b'...bring lunch or snacks and pull over to picnic. My goto snack is MEAT COOKIES! Probably not a new idea, but they are convenient to travel with, last forever in the freezer, relatively healthy (compared to raw salami), and taste good.
Recipe - Slice dry (uncured) salami chubs into thin slices
Arrange on paper towels and cover with paper towels on plate Pic 1
Cook in microwave oven (depending on MW power, thickness of slices, etc.) for 3-4 minutes... more time, more crispy
I take them out at two minutes and change the paper towels. Pic2
They lose about 30-40% of their weight in fat, oils and moisture. Pic 3 After they cool, I put them in zip lock bags and they go into the freezer until needed. I usually bring crackers and sliced fruit to compliment them. Feel free to share your recipes for 'snack time on the road'.

If you make croustades (uppity "crackers") from good sourdough bread, it's a great flavor boost and texture to accompany something like these cookies. A tighter or more dense interior structure works best so there aren't big holes. Unless you know what the bread is like inside, many times it's easier to buy fresh sourdough bagels to slice on the bias (diagonally) into small rounds & toast until dry. Season them more if you like before drying.
If you use bagels and have a good source like an actual bagel shop, it easily opens up all kinds of "chip" flavor options. And if you buy day old bagels for half price, it's guzzi content.....

Off topic: Two days ago we had 1/2" of wet snow and I slid down my driveway in my Grand Cherokee. I ordered new tires and they came in today. However, I woke up this morning to 2" of snow. Ironic...I can't get down the driveway safely on the old tires to get new tires...hummm

When we were leaving VT, I had a 2 or 3 yr old John Deere snowblower that I bought new. Fantastic machine but it was time to sell it. My friends were surprised I wasn't taking it to SC. I had to explain that even if I needed it and blew the driveway down here, the roads still wouldn't be plowed. so there wasn't much reason to stress about the driveway. It was kinda hard for them to understand.
Now they brine, sand and plow the roads down here. Not the plowing pace like in VT, but not like 30-40 yrs ago here either when it was 100% Solar.
We only had flurries the other day and don't think more is expected here for a while. Need to go to TN soon, so expect we'll see plenty of snow along I-40 going over the mountains.

Jim - If they were made of groundhog, you'd probably have to wait six weeks to eat them.
They don't last that long in my house.
Cliff - Two inches+ snow during the night in Asheville, NC. I was supposed to get there today to get new (more aggressive) tires. I don't dare to go down my steep driveway to the main road to the installer. Kind of ironic, huh?
Hope your path to TN is better.
