A modern V50 - would it sell? Would you buy one?

Would it sell? Depends - on price and looks, i.a.

Don't think so much of the word "V50" - what's central in this discussion are weight and performance

That's a cool looking little bike...but it's only a 250cc.  Still, I'll bet a lot of FUN to ride around the hood!!

I agree. Piaggio could likely adapt an existing (scooter) powertrain to build it. Something like the stillborn Italjet Amarcord.
