Does anyone use a .GPX reader when riding?  If so, which one do you recommend or not recommend?

I use the paid version of Locus Pro, offline maps and several map types available.

Not real sure what you mean. I use OSMand+ on my phone and view my GPX files.

There is a free to download program called GPSBabel, oh look programming nerds and a Hitch Hikers Guide reference how completely out of character! Anyway it allows you to transfer GPS files to various formats, which will open up your options somewhat.

Hitchhikers Guide Reference?  They used GPS in the Hitchhikers Guide to the galaxy?  Cause, you know, Babel came from somewhere else.  dontcha know? 

I would like to convert GPX files to KML files.  I will have to check that app out.
