Seems like a tall order to get touch-ups to match with hi-temp matte paint on exhaust parts. If you are talking about painting the entire things, I would say just take them for Cerakote and probably never worry about chipping/scratching again
I do feel your pain on the dealer scuffing it.
I just took one of my bikes for a fork rebuild (one of those things I can do, but if I order the parts, they will sit on my bench for a year before I get around to it) and when I got it back, it ran fine for a day or two... Then I was hauling ass around in the mountains when suddenly one cylinder cut out. I looked down and my spark plug lead was swinging in the breeze. They had tipped my bike over, which broke the plug cap, bent the threaded post... AND THEY JUST SHOVED IT BACK ON WITH A CRACKED CAP AND GAVE IT BACK TO ME

Needless to say I wont be using that indy shop anymore
