What do you think the attachment on the center triple tree post is? Vibration damper ?

If you mean the long black bar/tube on each bike, attached to top of the steering stem on each bike- it is an upper fairing mount

Those are some serious machines! The breather setup is interesting.Almost looks like it was made with automotive radiator hose.

Old race bikes typically have carbs that have no idle circuit.   so if revs aren’t up, they stall.

I could never understand that. My race outboards had the idle circuits disabled. On a cold start I held the throttle just high enough to keep them running to get some heat into motor before I hammered them.

Well, the guy who was holding Agostini’s throttle for a while was just maintaining an engine speed high enough not to stall. So the reving is optional.
