I noticed Guzzi is selling the pipe to eliminates the catalytic converter on the TT So eliminate the CAT change the exhaust and remap the fuel injection. What will that do for the performance of the bike? Those three things would be about $1000.00 is it worth the cost?

Guzzi is not selling it, dealers and others are selling aftermarket "kits". I can't answer the rest of your question.

No idea what installing the Guzzi pipe will do but Mistral has a chart that shows the results if you install their exhaust along with their V twin boost module to adjust the mixture and it only gets you 1-2HP at best on a Euro 4 or 5 bike.
On a Euro 5+ bike (2025) they claim 2-5 HP boost. Euro5+ has no sensor after the cat.

In a fit of boredom a couple of winters ago I bought and installed the Mistral complete system on my 2021 V85TT. The Mistral system is a very high quality work of art, but unless you are mad at your money, just keep it stock. There is no real life advantage that you will ever notice for having lightened your wallet. There is almost a 20 lb weight saving, but you will never notice it.

The Mistral system is really nice, well built, and yes, expensive enough to noticeably lighten your wallet. As far as not noticing the performance enhancement? I can assure you the difference is tremendous. Losing over twenty pounds has been very transformative in how nimble the bike feels both on and off road. But the second biggest reason I willingly slimmed the thickness of my wallet for the whole system was to eliminate the radiant heat coming off the cat.

I went with the Mistral Headpipes with the cat on my 2025 E5+. The Cat is in the rear of the pipe and looks the same as if it had no Cat. No doubt could be punched out as its just a grid of wires. I might have gone with the Mistral muffler had they been available but went with a Leo Vince instead and it was half the price and just as well made.
I was looking for less weight plus a bit of sound. Hard to even hear the motor with the stock muffler. I left the DB killer in the Leo Vince. Added the V twin boost but still have the stock air filter. Pretty happy with it now.

I was thinking cooler running and a slight bit louder exhaust note? I was told late model bikes need to dealer mapped beetle map's can not be used due to the use of the near "canbus" archtecture.

I just did the cat delete on my 25TT. I put on the Agostine headers, and Y pipe. You're correct, there is no battle map option, or any other that I have found for the E5Plus. I left the stock can on and it seems to run great. I get a very lite occasional off throttle burping, but nothing like I have had on other bikes with this type of mod. I'v only ridden it about 50 miles so far, but i don't expect it to get worse. It is louder, but not anywhere near to loud, but at least I can hear it now. It's also just under 10 lbs lighter than the stock set up, so I'll take that as a win.

I just used the Vtwin Boost. Put everything together at the same time so don’t know if I would have gotten popping without it but with it, zero popping on deceleration. Gas mileage is still mid ‘50s.
