To give it some MG content, say like a pad that settled and you need to keep the bike level.
Ardex K60. It isn't cheap but dang it works fantastic. No water, it uses a latex binder. The results are perfect, it self levels like melted chocolate and sets up pretty quick. The mixing is easy too, drill with spiral mixer bit. You can trowel it but usually not necessary.
Will flow to a feather and just works. No bubbles or voids. Quality sometimes costs.

Of course, it all depends on what you are going to use for a floor covering.
If you (like me) are a fan of some of the newer laminate flooring options, there are a selection of pad materials here that will deal with many uneven floor problems. The standard padding is too thin for these adjustments, but the thicker pads are often of a consistency that allows them to compress and fill enough to make an older subfloor level when finished.

I had a sub-contractor do a floor leveling job of a commercial space (3,000 sqft.) and it wasn't cheap but they did the whole place in one day. On that large of a space the trick was wearing some cheap spiked golf shoes and a large squeegee to move the material around. After watching those guys install the Ardex I never bothered calling the sub for future work because it was so easy to install but on really large jobs you need a pumper to get the material in place fast.
