Too hot to ride so putting up provisions for the winter
« on: September 10, 2016, 12:29:22 PM »
Last week my dad picked me up 24 quarts of Jalapenos at the local produce auction for $6. Spent 6 days turning 16 quarts of fresh jalapenos into a gallon zip top bag full of apple wood smoked chipotles. Soups/stews and chili are going to be tasty this winter.

We also have jalapeno and habanero plants that my daughter and I started from seed back in March that are producing nicely. So this morning made 6 pints of raspberry jalapeno jelly and as soon as the next set of jars are sanitized onto mango Habanero jelly. Next week I'll have a ton of ripe habaneros that'll get dried and crushed to be used when making summer sausage or beef snack sticks.

Had a little overrun of the R/J jelly so it was a great time to sample. A wheat cracker with a slice of Irish porter cheese and a dab of warm R/J jelly was most excellent.

Cream cheese and pepper jelly on crackers is good too.

Just finished up a batch of strawberry/Jalapeno

Tomorrow peach/habanero. Gonna use a few extra habaneros to bump up the heat level to " T- 7 hours to flaming ass". This batch will be slated for covering cream cheese and glazing chicken parts.

Might have to fix up a fresh batch of biscuits for tomorrows breakfast to do a sampling. A pound of salty bacon might compliment well.

Update:

6 - 1/2 pints of Raspberry Jalapeño, done
6 - 1/2 pints of Mango Habanero, done
12- 1/4 pints of Strawberry Jalapeño, done
12 - 1/4 pints of Peach Habanero, done

Kitchen is all cleaned up, dishwasher is cleared out and nothing left to do but enjoy a couple of drinks and the rest of a beautiful afternoon :thumb:
