Cali EV Pannier Options - help please

Hello folks,
I'm new to the forum having just bought a near pristine 2001 Cali EV with just 4,400km on the clock.

The bike came with a Givi plate for the rear rack, so a Givi trunk it will be, but I want to buy some pannier carriers/racks and a pair of panniers.  So here's the question:  what are my options?  I know Givi and Hepco and Becker make racks, but I would like, if possible, some soft luggage that actually attaches to the racks as opposed to the throw over type.

All thoughts and advice will be very much appreciated as there is so much kit out there, it's a minefied  :) ???
