Whats for dinner tonight? Scottiglia and Polenta

3 types of meat around a pound each. I'm using a top sirloin roast, chicken thighs and pork rib meat. You can use veal, lamb, rabbit, deer or what ever meats you like.


1-1/2 pounds onion diced
4 cloved garlid diced
1/4 cup or so of olive oil
1 or 2 sprigs of Rosemary
2 Bay leaves
2 cup red wine
2 cups vegtable broth
Handful of baby carrots
28oz can od San Marzano tomatoes
1 brick Polenta

Cube up the meats and geta Dutch oven or HD skillet heated and drizzled with olive oil. Work in batches so you don;t over load the skillet brown the meats on all sides then set aside. Season each batch of salt and black pepper.



While the bmeats are browning dice up the onion and garlic



After meats are browned drizzle in a little oilve oil and sweat the onions and garlic until they start to clear.



After the onions are clear add wine and scrape bottom of pan to get all the good brown bits off the bottom. Then add the broth, tomatoes and carrots and stir well.



Drop in the bay leaves and rosemary cover and simer for 3 to 4 hours stirring periodically.

Cooking truly puts me in my happy place. Being able to share a meal with family and friends (old, new and one's I've yet to meet) is something really special.

I've been making dinner for Dorcia's sister and harley Bob all day.  :smiley: Home made smoked pastrami with home made Russian dressing, baked rye bread, potato salad, etc. Might even have a beer. Or two.  :boozing: :smiley:

Youse guys are killin' me. Know one else is here. Too busy today & have run out of energy. Chuck's corned beef has me salivating. I'm ~80 miles, round trip, from my favorite Hungarian corned beef shop; which only opens 'til lunch 5 days/wk. There are 3 exceptional restaurants w/very good burgers. I'll get one and finish my private pity party, w/the dog.   
 
BTW: I believe perazzimx14 has scorched my tonsils and established the limit of heat I can endure. Still chewing but found ice cold, maximum pulp orange juice to be a nice antidote.  Love it!  R3~

I only used 19 ghost peppers in that batch of jerky. In my quest for making intolerably hot jerky this last batch was about 1/2 the heat level I am seeking.

I'll mark you down as tentative when I get ahold of some Carolina Reapers :food:

I've ran out of jerky. Need to make another batch..  :grin: Oh, and I found some humongous Jalapenos a couple of days ago and made Atomic Buffalo Turds for an appetizer today. They were awesome..  :grin: :thumb:

ATB's are stuffed jalapeno wrapped in bacon and smoked. Good stuff.
