That salad is beautiful.
But how do you get ripe (white?) peaches this time of year? Do you ripen them yourself?
Peaches were store bought and looked good but as expected were not like fresh locally grown. <y daughter is a peach freak much the way I am a raspberryaphile and anything is better than nothing. This salad will be great once peaches and tomato's are in season.
Its a weird collection of things that in the end really play well in the end

French baguette (to make crotons)

Red wine vinegar
Lemon zest and juice
