Repair Geek & Project Farm both do a good job of providing information based on actual experience.

Most of the YouTube channels I follow are a mix of education and entertainment but here are a few that lean more towards the learning side
Allen Millyard
Brocks performance
Jafromobile
Papadakis Racing
RS garage
Steve Morris engines
Welding tips and tricks
I believe janguzzi had a video that helped me set my TPS when I first bought my California.
