Found a great place to get seat work done.  Paul at wickedstitcher.com (shop's near Pittsburgh) is an excellent craftsman and a really nice person to work with.
Since his shop was kind of close,  I rode out and introduced myself and showed him the bike.   We talked about what I was looking for and scheduled a time I could leave the seats at the shop.   First thing he did was a foam prototype with a temporary cover.  He wanted us to give it a good test ride and tell him what we thought needed changed/fixed/modified before he put the permanent covers on.  We did 250 miles on them the next afternoon and were pretty pleased with them already.  So it was a go!
I picked out the materials I wanted on the seat, which were a soft leather look for the tops and a soft carbon fiber for the sides and accents.  My pillion liked the red stitching in the stock seat,  so we requested that also.
He has all kinds of sample books to choose from so getting a material, be it vinyl or a number of different leathers, so he has you covered (pun).
(Here's the Guzzi content) -  We had our Stelvio done a year or so ago at BMS.  We had the driver seat widened and leveled and the pillion seat covered to match.  Looked ok and felt pretty good also.  But they looked pretty generic considering the cost.   
Paul at Wicked Stitches hit it out of the ballpark with the craftsmanship, feel, and look of the seats!  Plus - He also did the trunk pad to match.  These seats are awesome!   He does all kinds of upholstery work, so if you're in need, look him up! 
They'll be getting a long distance test this long weekend..   Probably down in Dean's area!!

Thanks!   Good to know that that's a seat option.

If I were king, motorcycles could be sold without seats, and everyone would have one made for them ....!

We've done about 5000 miles in just over a month and a half..  So far we're in love with the bike.

The good:  GIZMOS    :bow: CRUISE CONTROL!  There's traction control, anti-lock brakes, and the ADD suspension system.  I have to admit the suspension is pretty nice.   The Capo feels very light while riding around and even when re-positioning it in the garage.  She's also slightly lower than our old Stelvio.  That's nice in low speed situations.....more confidence.   Good wind protection with stock screen in the lowest position.  Smooth engine with good shifting. 

The bad: GIZMOS   :popcorn:  If they ever decide to stop working.  Slight stumble in the 2500rpm range (that could be because I like to ride in too low of an rpm range sometimes.  It's what I'm used to though).  The Stelvio was good at even that low of an rpm.   Geared very high...adding two teeth to the rear sprocket at some point.  Thankfully there's a gear indicator to remind me that I have one more gear. 
Wonky fuel gauge.   Blows through the first indicator bars and stays on the last bar quite a long time.   Almost like the first bars are good for 20 miles apiece and then the last bar is good for 100 miles..  The speedometer is about 8% off.   That's a little too much for my liking.  Has a hesitation when trying to start the engine after it's hot sometimes.   Big V-twin with a small starter I think.   Has to overcome the compression stroke I guess? 

All in all,  a very comfortable ride (and now even more comfortable with the redone seats).
The ADD suspension is cool..  We sit on the bike and if it's in "auto", the bike will add preload to match our weight.  The traction control works!   We found ourselves climbing a bumpy gravel/dirt road a while back,  and I could feel (and see) the ATC kicking in.  Not sure about the anti-lock brakes........yet!  The luggage is what we're used to...having had an aprilia Futura and a Moto Guzzi Breva 1100.   Works nicely and is on or off the bike in a couple seconds.  The matching aprilia trunk is nice and big and looks part while not being expensive considering it includes the base.
