Probably EMGO Dunstall replicas with at least some of the guts removed .

Would I get a similar sound on a stock 850 with these pipes alone you think?

YES, be thrifty, look around, some suppliers are cheaper than others.  Make sure they have a removable baffle.

Got mine from Kirk.

Like most people I dicked around with cheap mufflers for a while.  I ended up with a set of these.  Four times the price but you only buy them once.  Removable baffle lets you tailor the sound to your or your neighbor's preferences.

Be advised that your centerstand will be rubbing a bit and the rear axle will not come out easily due to the lack of the reliefs the stockers have. That said I ran those dunstall types for a few years until they rusted out and went back to stock on the T3. I would estimate the stock mufflers are about 20 decibels quieter and about double the price if you can find them. I believe the now restructured Stucci Luigi company has them available in Italy

I assume the same would apply to these Mistrals correct? Any suggestions on what I can do to remedy any rubbing?

These are the ones most like the originals I had on my T in 1976 and they work fine even the last 30yrs on my Cal II. Got a new pair on the shelf.

No rubbing, axle is easy to get out.

Send an email to MG Cycle and ask about the centerstand rubbing.  The original mufflers had cutouts so you could remove the rear wheel without disturbing the mufflers.  That won't be possible with any aftermarket exhaust.  I had issues with the thin chrome on Emgos but that was 20 years ago so YMMV.

This is the MG Cycle house bike with a good shot of the Mistrals:
