Leg(s) of Lamb in 45 minutes
« on: April 01, 2018, 06:11:44 PM »
We celebrated several Birthdays and Easter at Mom's house.  She had three legs of lamb, butterflied, no bones at about 18 lbs total.  The legs were sitting out marinating with garlic but she was too tired and to weak to cook them.

Since I showed up a little early, I had to get after it before all the family came over, about 20 of us in all.  I set the oven at 475, dashed some kosher salt, cracked pepper and greek spices on them.  Threw 'em in the oven at about 445.  Then got them up to temp and took them out in 20 minutes.  Painted them with olive oil and spices, put them back in at 375.  Two were done in another 25 minutes, just perfect under medium.  I took them out and covered with foil.  The larger one stayed in the oven to finish and rest.

Not surprisingly we ate the two.  The third was wrapped for take home.  It was also just perfect when we carved it.

I hadn't cooked a leg of lamb before, much less three.  I was very concerned getting them done with so many hungry people showing up.   I would have guessed that it would have taken twice as long.  I barely had time to finish a Tecate before I was slicing it.

Hope everyone had a Happy Holiday.

Brave man!   You didn't say whether you stuck a thermometer in them or not, but if I were cooking meat of a type and cut I hadn't done before, I'd have been a bit worried about taking a shot at it, and planning on feeding a bunch of people ....

yes.  Meat thermometer.  That's why the bigger one went back in the oven.

I was amazed the first two were done.

Shit now you've done it !
I'm hungry enough to eat the crotch out of a low flying duck.
Speaking of ducks.
Is it true that when cooking a duck, you put a brick in with along side and when the brick's cooked, the duck's ready ?

There's no need to even cook it. Here's a few duck breasts I cured last week.
