Were the heads off and that is why you torqued them?
I believe that they should be torqued twice after the heads are off, a second check after 500 miles or the like.
When I rebuilt the LM 1000 engine, I was surprised how much the gasket settling had allowed the nuts to loosen with running.
If it's not so bad why bother, but even if it is, taking the head off only takes a few hours (and I work at glacial speed).
Personally my worries about head removal are exhaust studs, I find they are prone to snapping so lots of antisieze and the inner head nut and cover on the opposite side from the plug that is a bear to remove every time.
