Here’s a suggestion for Americans riding in Italy and wanting something for a light lunch that won’t make you want to nap for the next two hours: Insalata Caprese. You’ll not likely find it in a U.S. restaurant even though it’s ubiquitous in any Italian restaurant (real Mozzarella di Bufala is nearly impossible to find on this side of the Atlantic.

Even though it is a cheese, it can be quickly rolled across the barbecue to make a 'fumicata' version.

Ahh, buffalo cheese :thumb: I have eaten Indian Bison cheese , pretty good with a Choc beer .

Plus 1000 on the Caprese Salad option...luckily there are enough Italian restaurants who know how to serve this up properly here in town.
I feel like we now need a Bruschetta thread to accompany this properly...
And then perhaps an Affogato one to wrap it up completely...then our gastronomic journey would be pleasantly complete!

Those are buffaloes. The American version was called like that cause European explorers had not other words to call them.

Tatanka is also the name of the buffalo patrol in the Boy Scouts Wood Badge. Wood Badge being the highest level of adult training started by Baden Powell, founder of the Scouts.
Back to the salad, there's a similar Spanish recipe that calls for marinating the tomato slices in a good balsamic vinegar and olive oil prior to seasoning with coarse black pepper, sale and garnishing with basil, very thin onion slices, capers and goat cheese. Mom makes it as a side to most of her meals.

I make that in the summer. It's not the same with dried basil and store bought tomatoes. Not even close..

Yeah , the males aren't , er , let's say , cooperative :laugh: Actually , Tatanka is a term for bison in general . I've eaten bison milk cheese , low in fat , the variety we had was kind of like Feta .

No trouble ay all Dean but my cousins have shown me a place in Venafro that they say makes the best "Buffalo Balls" It's a bit of a ride from here but they say it's worth it :thumb:
