If you look in service manual you'll see on outside of throttle body a round channel and a screw facing down looking underneath. Closing enriches it,opening leans it.  The co trim does affect some of the range in map. I use a ColorTune to set mixture & others use a meter up tail pipe. I have seen that number quite high and adjusted to tune FI. I set air bleeds at a set 3/4 turns out. Some came with that screw 1 1/2 out on V11's.

Got it. That only affects idle, correct? Also, going up in CO trim enriches the mixture, right?

CO trim works most in low rpm, and the higer it goes the less it does.
If you have the cables for guzzidiag, editing the fuel map with tunerpro is easy, Select whole fuel map and multiply with 1.05 for 5% more fuel

I'm an analog guy in a digital world, so my previous comment about using a Booster Plug is what worked best for me.  Unplug a sensor, plug in the BP, plug in the sensor, route the BP sensor, and I was done.  Didn't have to download numerous files, didn't need a cable or gizmo to load the files, and it made whatever bike I installed it on run smoother, especially at idle and lower rpms.  I installed a BP on a couple of Triumph Street Twin 900s I used to own, an Aprilia Dorsoduro 900, and maybe a BMW K1200S, I'm not sure.  I don't think they make them for any of the Euro5 and higher bikes though, which is a moot point, since a Nevada isn't Euro 5-spec.

Anyway, sounds like you're on your way to figuring it out, so good luck!
