There's a bunch of little wineries up in Amador Valley I could visit.
They have a lot of Reds there and I could talk to the Owners about buying their pomace.
Pomace is the key to Grappa.
On average 100kg of grape pomace yields from 4 - 8 litres of grappa at 70%abv.
Of course I might have to buy a case or so of their wine. It would be a win-win proposition.
