I could be wrong, but I think I see the bottom of a small battery under the seat.  He had to hide it if he wanted a true cafe racer.

not to mention countless hours of labor and the fact that this is a $4300 stock bike before you even start this process.

Well, now that you've butchered up a questionably $4300 bike, and put countless hours of labor and money into it, expect to get.. uh.. $3500 if you're lucky. There are some good parts there.
