New Moto Guzzi Door Mats Available Now
It sounds like you've got the OEM Tommaselli Daytona 2C (?) throttle, the same as on my T3. If so, that pin (a very thin spring steel wire clip) retains the rubber boot. No harm in removing it.To replace the cables you need to remove the two screws holding the chrome housing together and lift it away from the throttle spool (that is, the grip) that the cables attach to. Then you can see how to unhook the old ones and put your new ones in.Hope this helps.
. . . and I need some of the cable angle end bits to build a cable for a lid release (need to make two hard bends). Will you have extras when the job is done?
